Ingredients

Veggie Puree

     1 medium russet potato, peeled and cubed

     2 medium carrots, peeled and cut into 2 inch pieces

     1/2 medium yellow onion (4 oz), quartered

     1 medium jalapeño (whole for mild, halved for more heat)

     1–2 tbsp olive oil

     Pinch of salt

     3/4 cup unsweetened oat milk

Pasta & Sauce

     12 oz gluten free brown rice elbows

     3 tbsp olive oil

     2 tbsp gluten-free flour

     2 cups unsweetened oat milk

     2 tsp garlic powder

     1 tsp onion powder

     1.5 tsp salt (start here, adding more to taste)

     1 tsp smoked paprika

     1/2 tsp black pepper

     1/4 tsp nutmeg

     1.5 cups roasted veggie + jalapeño puree

     1/2 cup dairy and nut free cheddar

     1/3 cup nutritional yeast

Topping

     1 1/3 cup Lentil Telepathy’s Crunchy Toasted Cheddah Lentil Toppers

     1/4 cup dairy and nut free cheddar

     Fresh parsley, cilantro, and/or chives, chopped

Equipment Needed

     9x13 inch baking dish (3–4 quart)

Directions

  1. Preheat the oven to 425°F.
  2. Toss the potato, carrots, onion, and jalapeño with olive oil and a pinch of salt. Roast for 40 minutes, flipping halfway through, until the vegetables are soft and lightly caramelized.
  3. Remove jalapeño seeds if desired. Blend the roasted vegetables with oat milk until smooth and creamy. Measure out 1.5 cups puree.
  4. Cook pasta in salted water until just under al dente, about 2–3 minutes less than package instructions. Drain and set aside.
  5. In a saucepan, heat olive oil over medium heat. Whisk in gluten-free flour and cook for 1–2 minutes. Slowly whisk in oat milk until smooth and slightly thickened.
  6. Stir in garlic powder, onion powder, salt, smoked paprika, black pepper, and nutmeg. Add the roasted vegetable puree, dairy-free cheddar, and nutritional yeast. Stir until creamy and fully combined.
  7. Combine the pasta and sauce in a 9x13 baking dish or oven-safe braising pan.
  8. Top with dairy-free cheddar and 1/3 cup Crunchy Toasted Cheddah Lentil Toppers.
  9. Bake at 350°F for 20–25 minutes. Broil for an additional 3–6 minutes until the top is lightly browned and bubbling.
  10. Let cool slightly before serving. Finish with fresh herbs and a generous handful of extra crunchy lentils for added texture.

Notes

     For more heat, roast an additional jalapeño and either blend it into the sauce or stir chopped pieces into the pasta before baking.

     If making ahead, wait to add the final lentil topping until just before serving so it stays crunchy.
